Blue-Veined Cheeses take on their distinct features during aging. Mold cultures are first applied to each brine-soaked wheel of formed cheese curd with starter cultures, then the wheel is gently pierced through, allowing oxygen to enter the cheese where it blooms into the flavor, aroma and veined texture we associate with Blue or Gorgonzola Cheese.
The younger, creamier versions are softer and feature a milder aroma—a longer aging process reduces the cheese moisture levels, producing a dense, earthy-noted crumbly curd that’s perfect for sprinkling on salads, in dressings or atop grilled steak.
