Hard Cheeses are foodservice pantry staples for the incredible and often bold taste they impart, giving platings a punch of robust dairy flavor. Hard Cheeses are aged—naturally removing moisture—which intensifies their flavors as they ripen, along with lending to the namesake texture.

Stella® Parmesan Cheese  

Nutty, Buttery Flavor Addition

A classic Parmesan Cheese was the first product of the Stella Cheese Company in 1923, and the authenticity of the original product carries forward to the cheese offered today. This domestically crafted Parmesan Cheese is dense, grainy and crystalline in texture, with a flavor profile that is sweet, buttery and subtly nutty.

Stella® Mediterranean Parmesan Cheese

Enhanced with Savory Spices

The rinds of Stella® Parmesan Cheese wheels are hand-rubbed with an earthy mixture of tomato, extra-virgin olive oil and a blend of paprika, sesame seeds and garlic—then aged for 10 months to take on a piquant savory flavor atop the nutty cheese notes. The texture is classically dense and grainy.

Stella® Romano Cheese

Sharp, Tangy Authentic Flavor

This handcrafted Romano Cheese has a sharp and salty flavor that is slightly elevated from Parmesan Cheese. The flavor benefits from cheesemakers piercing the surface of the cheese wheel and salting prior to aging. The texture of this domestic Romano Cheese is dense, brittle and crumbly.

Stella® Black Pepper Romano Cheese

Aged with Black Peppercorns

Black pepper is known to enhance our ability to taste food flavors fully. This special Stella® Romano Cheese takes advantage of that flavor boost. After a traditional salting, the fresh Romano Cheese wheels are coated with cracked black peppercorns, then set to age for five months. During aging, the sharp cheese melds with the sharp pepper, creating a bold flavor that is exciting to taste. The texture is traditionally dense and crumbly.

Stella® Aged Asiago Cheese

Robust and Crumbly

The extra-long aging of the 12-month Stella® Aged Asiago Cheese renders a robust, sharp cheese with a complex, nutty flavor and mature yellow color. The texture is firm and crumbly. 

An authentically crafted Asiago Cheese is aged to different dates to produce the three varieties of Stella® Asiago Cheese, each with different tastes and textures: fresh, medium and aged.

Stella® Medium Asiago Cheese

Stella® Fresh Asiago Cheese

This young Asiago (“Asiago Pressato”) has a mild, slightly tangy flavor and creamy yet delicate texture. The color of Stella® Fresh Asiago Cheese is a pale off-white at the center. This Fresh Asiago Cheese is recommended for melting culinary applications.
