Khachapuri Stuffed Bread with Mozzarella and Feta Cheese and Baked Egg

A traditional Georgian dish of cheese-filled bread so simple, it can’t help but be delicious. Its rich, egg-washed crust acts perfectly to hold in the beautiful melted richness of Mozzarella Cheese and creamy tastes of Feta Cheese and Ricotta Cheese.

Ingredients

Cheese Filling
  • Shredded Mozzarella, 1 cup
  • Feta, 1 cup
  • Ricotta, ½ cup
Dough
  • King Arthur Bread Flour, 1 cup
  • Warm Water, 1 cup
  • Whole Milk, ½ cup
  • Light Olive Oil, 1 cup
  • Instant Yeast, 1 cup
  • Sugar, 1 cup
Egg Wash
  • Whole Egg, 1 each
  • Water, 1 teaspoon

Directions


Dough ,1 time batch
Cheese filling ,1 time batch
Eggs, 4 each
diced butter, 1 ½ tablespoon
Coarse finishing salt, kosher salt and black pepper, As Needed
Egg wash, As Needed

Dough
  1. In a small sauce pot, warm milk to room temperature. Remove from heat. Add water, sugar and yeast and mix. Let sit for 3 minutes.
  2. Transfer mixture in a Kitchen Aid mixing bowl. Mix with the dough hook for 8 minutes on speed 3.
  3. After 8 minutes, lower speed to 1 and drizzle in the oil. Set the speed back to 3 and mix for another 2 minutes.
  4. Transfer the dough into a large, oil line bowl and cover with a damp cloth. Let sit in a warm area (about 73°F) for 1 hour.
  5. After one hour, punch the dough down and cover again, letting it sit for another 30 minutes in the same environment.
Cheese Filling
  1. Mix all together in a Kitchen Aid mixer with the paddle for 2 minutes
  2. Remove and reserve for assembly
Egg Wash
  1. Crack egg and mix with water in a bowl. Reserve until needed.
Method of Preparation
  1. Preheat oven to 450°F.
  2. After the dough has rested for 30 minutes, transfer dough onto a flour dusted surface
  3. Cut into 4 equal portions
  4. Roll out into about an 8” diameter round, about ¼” thick
  5. Shape the dough edges into a football shape, pinching the tips
  6. Transfer onto a parchment-lined sheet tray.
  7. Fill doughs with 1 cup of the cheese filling. Egg wash the edges, sprinkle with finishing salt and cook in a 450°F oven for 15 minutes
  8. After 15 minutes, take out of oven and make a well with the back of a spoon. Crack an egg into the middle. Season with salt and pepper and add butter pieces around the egg.
  9. Return into the oven and cook for 5 more minutes
  10. Serve hot.
