Ooey-gooey Vegan Mac-n-Cheese

This vegan mac n' cheese inspiration features a roux-based sauce made with flour, olive oil, almond beverage and a good helping of Dairy-Free Mozzarella Style Shred for an added layer of flavor that’s packed with tangy goodness.

Ingredients

2 cloves Garlic, minced
2 Tbsp Olive Oil
2 Tbsp All Purpose Flour
1 ½ cups Almond Milk
5 cloves Roasted Garlic
1 Tbsp Nutritional Yeast
4 cups Lumache, or other small shell typed pasta, cooked
½ cup Dairy-Free Mozzarella Style Shred
Pinch Salt, Pepper, Parsley

Directions

In a large pan, sauté minced garlic in the olive oil until lightly browned.
Add flour and whisk together… cook 1 minute more.
Slowly add the almond milk while whisking to avoid making lumps.
Transfer to a blender with the roasted garlic and puree until smooth.
Return to pan, add the nutritional yeast and cook until thickened and smooth.
Season with salt and pepper as needed, then add the cooked pasta noodles and mix well.
Transfer to a cast iron skillet, top with Dairy-Free Mozzarella Style Shred and place in oven to melt.
Remove from oven and garnish with parsley.
